Summertime Treats

Nothing says summertime, quite like popsicle season! And why buy popsicles from the store, when there are a plethora of different recipes you can try and make yourself? While you can make a popsicle out of pretty much anything that freezes and let your imagination run wild, here are some recipes to get you started. Make sure you have a popsicle mold ready to go before you whip any of these up!

Notes: if you are using wooden popsicle sticks, you can freeze the recipe for about 30 mins, then when it’s set, put in the popsicle sticks. All these recipes should be frozen for a minimum of four hours, ideally overnight.

Creamy Pineapple Popsicles

20 ounces of crushed pineapple (it can be fresh or canned)
5 to 10 ounces of heavy whipping cream
3 tsp lime juice
1⁄2 tsp real vanilla extract

1) Blend all ingredients together until smooth
2) Pour into popsicle molds
3) Freeze and enjoy


Peach Sangria Popsicles

1⁄2 bottle of fruity white wine 1/3 cup of peach schnapps
1⁄4 cup sugar
1 peach, sliced
1 cup of blueberries

1) Mix the wine, schnapps and sugar together, and stir until it is all combined
2) Put the sliced peach, blueberries and mint into your popsicle molds
3) Fill the molds with the white wine mixture
4) Freeze and enjoy!


Cake Batter Popsicles

3 cups of vanilla ice cream
3⁄4 cup of yellow cake mix
2 tsp vanilla extract
1 cup milk
1⁄2 cup sprinkles

1) Use a blender to combine ice cream, cake mix, vanilla extract and milk. Pour it into a bowl once it’s blended and stir in sprinkles
2) Spoon the mixture into popsicle molds and freeze



Super Easy Fudge Pops

1⁄2 cup hazelnut spread
1 1⁄2 cups of chocolate almond milk

1) Put hazelnut spread in a medium bowl, and add 1⁄2 cup of the almond milk, stirring it until it is smooth. Slowly add the rest of the almond milk, and then transfer the mixture into popsicle molds.
2) Freeze and enjoy!


Roasted Strawberries and Cream Popsicles

1lb of strawberries, hulled and cut in half
1⁄2 cup of pure maple syrup (or honey) divided
1 tsp vanilla extract
2-3 tsp of balsamic vinegar
1 1⁄2 cups of full fat canned coconut milk
small pinch of salt

1) Preheat over to 375 degrees. Put straw- berries in a single layer on a baking sheet covered in parchment. Drizzle with balsamic vinegar. Roast for about 20 mins. Let them cool for about 10 mins on the pan, then transfer it all to a bowl, and let them cool to room temperature.
2) Add roasted strawberries over 1⁄4 cup maple syrup to blender and combine (you can leave some chunks). Set aside.
3) In another bowl, whisk together coconut milk and remaining maple syrup. Stir in the vanilla and salt.
4) Spoon about a tablespoon of strawberry mixture into popsicle molds. Top with cream. Continue layering until molds are full.
5) Freeze and enjoy!


Peaches and Cream Popsicle

2 14oz cans of coconut milk (full fat) 1/3 cup maple syrup
1 tablespoon vanilla extract
1⁄2 cup shredded coconut
1 1⁄2 peaches cut into bite size pieces Pinch of salt

1) Mix all the ingredients except the peaches in a bowl
2) Put some peach pieces in each popsicle mold, then cover with the mixture. Add more peach chunks, and cover with mixture.
3) Freeze and enjoy!


Chocolate Chip Mint Yogurt Pops

1 cup vanilla Greek yogurt 1 1⁄2 cups of milk
1 tsp vanilla extract
3⁄4 tsp peppermint extract 2 tbsp sugar
1⁄2 cup mini chocolate chips

1) Mix together milk, Greek yogurt, vanilla, peppermint extract
2) Pour into popsicle molds, sprinkle the top with the mini chocolate chips
3) Freeze and enjoy!


Blueberry Mojito Popsicles

1⁄2 cup sugar
1⁄2 cup water
35 mint leaves
3⁄4 lime juice
6 tablespoons rum
6oz of blueberries

1) In a small saucepan, combine sugar, water and 25 of the mint leaves. Heat over medium heat, stirring until sugar is dissolved. Once dissolved, remove pan from heat and let cool.
2) Once it has cooled down, strain out the mint, and poor syrup into a large bowl. Add in the lime juice and rum and stir until combined.
3) Pour into molds, filling it up 3⁄4 of the way. Add in a fresh mint leaf and 12 blueberries into each mold.
4) Freeze and enjoy!


Salted Caramel Mocha Popsicles

6 1⁄4 cups brewed coffee
3⁄4 cup cream
1⁄4 cup milk
3⁄4 cup whipped topping
3⁄4 tsp salt
chocolate syrup caramel syrup

1) In a large mixing bowl, mix together all ingredients
2) Drizzle chocolate and caramel sauce into each popsicle mold
3) Fill each mold with co ee mixture
4) Freeze and enjoy!
